Cauliflower Ceviche


This vibrant, plant-based ceviche is packed with fresh vegetables and zesty lime flavor. Light, refreshing, and easy to prepare, it’s a perfect appetizer or side dish for any occasion.

Ingredients:

  • 1 cauliflower (leaves and stalk removed)

  • 1 large white onion

  • 6 tomatoes

  • 2 cucumbers

  • 3 carrots

  • 10 stalks of cilantro

  • Juice of 3 limes (more to taste)

  • Salt and pepper, to taste

Method:

  1. Cut the raw cauliflower into small pieces or grate it and place it in a large bowl.

  2. Add lime juice, salt, and pepper to the cauliflower and mix well.

  3. Dice the onion, carrots, tomatoes, cucumbers, and cilantro, then add them to the bowl.

  4. Mix thoroughly, taste, and adjust lime juice, salt, and pepper as needed.

  5. Marinate in the fridge for at least 2 hours before serving.
