Almond Chicken
We don’t give precise measurements because we freestyle everything. The goal is to cook from the heart and use your instincts.
Ingredients
Almond flour
Fresh thyme
Black pepper
Salt
Milanese chicken breast filets ( thinly sliced or pounded into thin pieces)
Cooking Method
Preheat the oven to 250C (480F)
On a baking tray, spread out almond flour mixed with fresh thyme.
Salt and pepper both sides of the chicken breast and then coat with the almond flour/thyme mixture by pressing the chicken down onto the baking tray until it's fully coated in the flour.
It is important not to dry the chicken breasts beforehand so that the mixture sticks.
Transfer the coated chicken onto a baking tray lined with baking paper, and drizzle a little bit of olive or coconut oil on each side.
Bake in the oven for 25 minutes, and then put under the grill until golden.
