Pastor marinade

25 guajillo chilis 3 ancho chilis ½ white onion4 garlic cloves6 twigs of fresh oregano¾ tsp of ground cumin½ tsp ground clove6 bay leaves6 tbsp apple cider vinegar 3 tsp salt1 tsp pepper

MethodSoak the ancho, guajillo chilis, garlic and onion in hot water for about 1 hour or once soft. Blended with oregano vinegar cumin clove bay leaves salt and pepper.
Let it cool down and then use it to marinate shrimp, pork, portobello, mushrooms, chickpeas.
