Meal Inspiration

Here are some ideas for meals inspired by the Rē buffet.

Almond Crusted Fish

Dorado or white fish tossed in olive oil oregano and sliced almonds, cilantro pesto (cilantro, walnuts, olive oil, salt, lemon/ lime), roasted cauliflower (garlic, lemon, olive oil, cumin), beet hummus (roasted beets blended with tahini, lime, garlic and cumin), arugula salad (oregano vinaigrette, avocado, pistachios)

Buddha Bowl

Chicken (marinated in garlic, cumin and turmeric and olive oil), steamed broccoli, strips of roasted zucchini, grated carrot, avocado, sprouts, red cabbage (steamed in thin strips), rice, tahini dressing (tahini, ginger, garlic, lime)

Garlic Shrimp

Shrimp cleaned and cooked in a little butter and garlic, plantain puree (roast ripe plantains then blend with a little bit of milk and salt), zucchini roasted, avocado salsa (avocado blended with a little bit of water, lime and garlic), green salad (mixed leaves, cherry tomatoes, pomegranate seeds)

Pesto Chicken

Roasted chicken marinated in pesto, beets (balsamic vinegar, rosemary, sage), sugar snap peas, green beans, green salad with cherry tomatoes and pumpkin seeds

Miso Fish

Mahi mahi/snapper/cod with a layer of miso, jicama/carrot salad, fried ripe plantain, nori strips, sesame seeds, cilantro


Stuffed Chicken Breast

Chicken breast cut thinly in a thick strip, stuffed with roasted squash (butternut/kabocha squash) onion and sage and roasted. Red pepper sauce (red bell peppers, onion, garlic and oregano roasted then blended), rice.

Soup 

Bone broth (chicken or beef), protein (chicken or beef), rice, onion chopped, cilantro chopped, veggies (carrots/broccoli/zucchini), avocado

Spaghetti Squash

Shrimp sauteed in garlic, spaghetti squash roasted and seeds removed sauteed with pesto and cherry tomatoes

Meatballs

Beef or fish meat balls (protein minced or blended to form the balls, mixed with sauteed onion, garlic, basil and oregano plus finely chopped veggies), tomato sauce (tomatoes, basil, onion, garlic), with thick rice noodle or quinoa. 


Tacos

Al pastor (pork), tinga de pollo (chicken) or shrimp with plantain tortillas or corn (if you tolerate it, also some health food stores have cassava flour tortillas), toppings (cilantro, salsas, chopped onion, avocado, roasted pineapple)
