Brazilian Fish Stew

Ingredients

Makes 4 - 5 portions

1 kilo mahi mahi white fish
3 tbsp coconut oil
1/2 cup red onion finely chopped
2 tbsp garlic finely chopped
2 red bell pepper chopped
2 tsp paprika
1 tsp cumin ground
1 ½ cup tomatoes chopped
3 tbsp tomato paste
500 ml water or fish stock 
1 tsp salt
1 tsp black pepper
1 can of coconut milk
3 tbsp cilantro finely chopped

Method

  1. Season fish with salt and pepper

  2. In a large pot, heat coconut oil over medium heat

  3. Add onion, garlic, bell pepper for a few minutes, until soften

  4. Add paprika and cumin and toast for 1 minute

  5. Add the tomatoes and cook for about 10 minutes until the tomatoes are soft and quite mushy, add the tomato paste.

  6. Add the water or stock bring a boil

  7. Add fish simmer for 8 minutes until fish is cooked trough 

  8. Add coconut milk and simmer for 5 minutes

  9. Add cilantro

Serve with basmati rice and your favorite veggies.
